Valentine Recipe: Champagne Cherry Heart Scones

Are you looking for a healthy option but also sweet treat to make for your valentine this year?  Make a scrumptious batch of our Champagne Cherry Scones and use a heart shaped cookie cutter to add some “love”.  Make these this Valentine’s Day and bring a smile to your sweetie pie.

Champagne Cherry Scones
Makes 10-12

  • 2 cups Bisquick® baking mix
  • 2 tablespoons sugar
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup champagne (or prosecco, regular 7-up, ginger ale or club soda)
  • ½ cup dried or chopped candied cherries
  • Egg wash (optional)
  • Chocolate chips for chocolate drizzle (optional)

Preheat oven to 425F.

Place Bisquick and sugar in a mixing bowl.  Cut in sour cream until it forms small bits.  Make a well in the center of the dry ingredients and pour in champagne.  Mix quickly and gently until combined, then add cherries.  Dough will be very soft.

Sprinkle flour or additional baking mix on your counter and put dough in center.  Sprinkle top lightly with flour or baking mix and knead 4-6 time as you shape the dough into about a 3/4th  inch (2 cm) round.  Cut into wedges or use a cookie cutter to cut our hearts or rounds.  Please on ungreased baking sheet.

Optional:  Beat one egg until well mixed.  Brush tops of scones with egg wash before baking – this makes the tops a lovely golden color.

Bake at 425F until golden brown – about 15 minutes.  Remove and place on cooling rack.  If desired, melt chocolate chips and drizzle chocolate over the tops.  Serve warm with cherry preserves, whipped or clotted cream and more champagne!

Note:  These are fluffier than traditional scones.  Also, you can decrease the fat content by using low fat or not fat Greek yogurt.  Not into wasting champagne for cooking – then you can use 7-up, ginger ale or club soda.
